In a culture where natural foods areindustrially oversweetened, bitter foodslike citrus fruits or dark chocolate are undervalued, even though they contain valuable nutrients. BITTERBAR makes bitter tastes more appealing by mixing ingredients and spices linke grapefruit, cardamom and nettle with an associative AI-based tool and guiding through a tasting process. The bar opens with sweetness which fades into bitterness. According to research, round shapes are perceived as sweeter than sharp ones, which is emphasized by the variable fillet. BITTERBAR can be tasted on serving plates made out of stainless steel, analogous to the cocktail culture, where bitter tastes are already established. The project was realized in a workshop with Carolien Niebling.
